Hey another busy week down! It will be so nice to have tomorrow off, but we should remember why we have the day off. It is to remember those who we love but have lost, especially our service men and women and their families. Anyways, here’s a recap of my life this past week.
Sunday morning I was running late getting over to my dad’s house to leave for church, so I didn’t have breakfast. But then after church we stopped at a great restaurant that has lots of gluten free baked goods! I had a GF pecan roll and a couple eggs for protein. Later that afternoon we went to my cousin’s high school graduation! Dinner was made up of some fruit, a Vans gluten free waffle, one egg and egg whites.
On Monday it was back to work. For breakfast I had a strawberry protein shake. Then in the mid morning I had some Yoplait lactose free yogurt. Then for lunch I had more of my garlic chicken with cauliflower rice, and spinach. I got to the gym today and I did 30 minutes on the elliptical without my legs hurting! I also got in about 15 minutes of arms, some weighted squats, and hip hinges. Then for dinner I was really hungry and had a pineapple, banana, and raspberry smoothie bowl, Vans GF waffles, and egg with some egg whites. I have really been liking breakfast for dinner.
Tuesday I decided to make an oatmeal bowl. I made a 1/4 cup of Quaker GF oatmeal and topped it with some blueberries, yogurt, chia seeds, banana, and honey. I had the same garlic chicken and cauliflower rice with spinach as yesterday for lunch. Then for dinner we had some hot dog/brats with a tiny bit of chesse inside. I cut mine up and put it onto some spinach and had a few strawberries to go with. I then helped mow the yard. After that I came inside and had a Yoplait lactose free peach yogurt and some almonds for a snack.
Wednesday was a new day and half way through the week. I had another oatmeal bowl this morning same as yesterday’s with yogurt, blueberries, banana, chia seeds, and honey but I also added some pecans today. This one kind of tasted like a blueberry muffin :). For lunch I had a spinach salad with blueberries, strawberries, and grilled chicken. Then for dinner I had some chicken, green beans, apples, and roasted potatoes. (I have been bad about pictures the last couple of days, I need to get more in the habit.) I also got my first package of my personalized vitamins today from care of! You just take a quiz and they give you recommendations and put them in daily little packs with fun things on the front.
Thursday was another day full of activity. I had a yogurt with fruit and pecans on top for breakfast, and a few salted almonds later for a snack. Then for lunch I had my last garlic chicken, cauliflower rice, and spinach that I had made last week. All afternoon we worked on getting things over to my aunt’s house and around for our garage sale next week. Post about organizing and the whole thing will be up the week after the garage sale! After a long time working on that we got some take out from a pizza place. I had a salad with steak, bell peppers, sun dried tomatoes, and pineapple. It actually turned out to be very good!
Friday morning I had some gluten free oatmeal with bananas, blueberries, chia seeds and lactose free milk. I then headed to Hy-Vee, my brother’s preschool graduation, and then headed out to my family’s cabin at the lake for Memorial Day. On the way I had an RX Bar.When I got in I had some leftover pork roast. Then it was on the lake. We had a late dinner of burgers, quinoa and vegetable salad, veggies with humus, and some berries and grapes!
There is no better way to start off a day full of sun and fun at the lake then to go on a little walk. Before I headed out I had a RX Bar and a Yoplait lactose free yogurt. Not to long after I got back and had had my kombucha fix my step mom and I headed out to check out some of the garage sales happening around the other cabins. For lunch, I had leftover quinoa salad last night that had vegetables in it, added some spinach, chicken, and extra veggies. For a snack later I had some baked sea salt chickpeas from the Good Bean. Then for dinner we went out to eat on a restaurant on the lake. I had a breakfast burger(hash browns, hard egg, and bacon) without cheese and a bun with some fries (we will call this a cheat meal for sure:) )

What I learned from church this week: God calls us to NOW not when the circumstances are perfect.
What I learned from class: I should read all of my readings because sometimes the last thing in the chapter is an answer to a big question I have had in my life (God winks)
What I learned from life: Royal Wedding: We all need to hold out for the person who loves us and looks at us like Harry does Meghan. And have it be the Harry to our Meghan (aka be yourself, and find out who you are and what you believe and a person who loves and supports you in and for those things:) ) And look up Rev. Curry’s sermon highly recommend!
